AEBLESKIVER DANISH DONUTS

Aebleskiver Recipe

Ingredients

EGGS (SEPARATED): 3
SALT: half a teaspoon
GRANULATED SUGAR: (upto) 1 or 2 tablespoons
-(how sweet do you want them to be?)
BUTTERMILK or MILK: 2 cups
BAKING SODA or BAKING POWDER: half a teaspoon of Baking Soda and 2 teaspoons Baking Powder
(use both baking soda and baking powder with buttermilk, or just baking powder with milk)
ALL PURPOSE FLOUR: 2 cups
BUTTER or MARGARINE: 2 tablespoons (melted)
GROUND CINNAMON or CARDEMON: (upto) 1 teaspoon

Method

Step 1: Separate out the eggs,

Step 2: Whip the egg whites till they form and hold peaks.

Step 3: Mix the yolks and all the other ingredients (salt, sugar, buttermilk, baking soda/powder, flour, melted butter and cinnamon/cardamom.

Step 4: Beat the mixture till smooth.

Step 5: Fold in the egg whites slowly and gradually.

Step 6: Get the aebleskiver pan ready, warming some oil or butter in the bottom on a medium heat.

Step 7: Pour the mixture about 2/3 full into each indentation in the aebleskiver pan.

Step 8: when there is slight bubbling around the edges and a soft crust has formed (after perhaps 60 to 90 seconds), use a knitting needle (or a fork) to skewer and lift the aebleskivers a quarter turn, and every half minute or so give another quarter turn to create a ball shape.

Step 9: Serve with your choice of accompaniment - try injecting them with jam or applesauce and dusting with icing sugar, or pouring jam or a fruit sauce over the top of them. Alternatively try a savoury accompaniment - perhaps salmon and cream cheese.
