CHILDHOOD DELIGHTS

One of my happiest childhood memories is a beautiful sunny day on holiday in Denmark eating aebleskiver in an old traditional Danish restaurant with my wider family, and the happy feeling walking through the village in the sunshine having experienced a real eating delight. It was from a holiday with my brother and parents visiting my father's homeland and siblings. Such was the impact that we ended the holiday with my parents buying an aebleskiver pan (at my insistence I think) so that we could recreate the delight back in England.

It 's fair to say that for much of its life so far the pan, a heavy cast iron 9-hole thing, stayed at the back of a cupboard. But those memories of that aebleskiver day surfaced every now and again, and an occasional exploration into the cupboards unearthed it. Attempts have been made from time to time to recreate the feeling of that cosy restaurant with an endless supply of these amazing donuts, and accompanying jams.

Interestingly the frequency of reaching for the aebleskiver pan has increased in recent years and one of my sons shares my love of both making and eating aebleskiver - and it's fair to say that the rest of the family also happily engage with the results of our efforts!

We've become a bit more adventurous recently and discovered what a versatile base for a meal aebleskiver can be £ the range of accompaniments that go well with aebleskiver is huge (a bit like a traditional flat pancake).
